Huevos Americanos

I started making this dish in my early twenties while in code school. I needed a protein-packed breakfast that I could eat and repeat multiple days throughout the week; which meant I wanted to combine flavor and energy while keeping the cooking and cleaning quick.
So came my basic but great dish that my husband and I call "Huevos" — but if you're looking for something authentic to the true "Huevos Rancheros", I suggest you look elsewhere.
Ingredients:
1 egg, scrambled (with cheese, if desired)
7oz or so of black or refried canned beans, heated
4 tbsp salsa (e.g. Pace - Medium)
1 tbsp low-fat sour cream
Steps:
Scramble the eggs, over low heat, with a pat of butter. Add salt and pepper.
Over the stove or in the microwave, heat the beans of your choosing.
Add both the eggs and the beans to a bowl, and top with salsa and sour cream.
Enjoy the energy that will carry you through to lunch!
